This dish is a very popular and famous dish for lunch and dinner in Cambodia. The Combination of eggplant and pork is common in Cambodian food and other cuisines. The eggplant acts as a sponge and absorbs all the flavours of the sauce, garlic, and spring onion. The soft texture of the eggplant against the meatiness of the pork takes it to the next level. It comes with jasmine rice served on the side. This is a seasonal dish for us In New Zealand and only available when there are plenty of eggplants around.
